Beans, cannellini, white and small, dried
The white, kidney-shaped cannellini beans are ideal for salads and stews. Despite their pleasantly soft texture, they do not disintegrate like the brown varieties. After soaking overnight, the cooking time of the small beans is about 40 minutes. In Italy they like to be eaten with pasta or in combination with tuna as tonno e fagioli.
