The two main nectar sources, heather (Calluna vulgaris) and bell heather (Erica vulgaris), determine the strong, floral aroma of our heather honey. The sweeter, more delicate aroma of the Erica vulgaris harmoniously softens the robust flavor of the pure heather. In its liquid state, heather is gelatinous and reddish-brown, while when crystallized, it turns yellowish. One of the most popular aromatic honeys.
