Green olives with almonds are suitable as a bar snack or to garnish salads. The almond core creates a great mouth feeling. Green olives are picked when they are still unripe. Before being placed in brine, they are treated with lye. This process reduces the bitter substance content of the not yet ripe fruits and improves the consistency of the fruit pulp.
