Zite, also known locally as Boccolotti, originate from southern Italy, particularly the Naples area. They are oblong, round, and perforated, with a diameter of 7 mm and a thickness of 1.10 to 1.20 mm. Like di Candele, Zite are broken into irregular pieces before cooking. They are ideal for oven-baked dishes but can also be served with flavorful sauces: meat or fish sauces, strongly spiced sauces, or with flavorful cheeses such as Pecorino, Provolone, or Caciocavallo. They are also excellent in vegetarian dishes, for example, with vegetable tomato sauces, pepperoni, eggplant, and zucchini.
