Among the Grand Cru vineyards, Les Clos is considered the pinnacle and thus the crowning achievement of the region. The wines mature very slowly and possess an aging potential of several decades. They require ample aeration before drinking. The Chablis terroir is characterized by a high proportion of Kimmeridgian chalk in various forms, which imparts tremendous minerality and a steely acidity to the wines and is also responsible for their long aging potential. Eighty percent of the Grand Cru wines are aged for 15 months in used barriques. William Fevre, with 15% of the 100 hectares, is the largest owner of Grand Cru vineyards in Chablis. 96+ Parker points.
