Pecan nuts, shelled, Mexico
The hickory tree, native to North America and Asia, bears the pecan fruit. The shape of the kernels suggests a relationship to the walnut. However, the pecan is more elongated, firmer in texture, and significantly sweeter in taste. It has the same four-part basic shape, but its softened shell is much easier to crack. Pecans are especially popular for baking cakes, cookies, and biscuits. A large portion of the harvest, however, is sold roasted and salted. They are also used as a source of cooking oil, and nut flour is made from them. Store in the refrigerator or freeze.
