The Teals of Kaga Koshihikari Rice, short grain sushi rice, Japan
In the heart of Ishikawa Prefecture, in the town of Kaga, a group of young farmers has launched a pioneering project that combines traditional knowledge, sustainable agriculture, and respect for biodiversity. This initiative, called `Kaga no Teal,` began in 2014 and is named after the teal (the birds that visit the rice paddies each autumn to feed, motivating the group to continue avoiding pesticides and chemical fertilizers. Today, ten farmers have joined forces and created a structure where collaboration, knowledge sharing, and technological innovation go hand in hand with care and respect for all living things.
