2023 Sauvignon Blanc Hochgrassnitzberg DAC, dry, 13.5% vol., Walter Polz
The Hochgrassnitzberg vineyard is an exclusive wine grown on a sun-drenched south-east facing slope, in calcareous soil with shell limestone and sandy marl. The grapes come from vines over 30 years old. After harvesting, fermentation takes place in 2200-liter wooden barrels. The wine matures for one year on the lees without the addition of sulfur and is then refined for a further year in stainless steel tanks. The result is a wine with a delicate bouquet reminiscent of flint. Its spicy, elegant aroma makes it a truly special experience. The meticulous winemaking process, the long aging period, and the unique growing conditions lend this Sauvignon Blanc remarkable complexity and depth. A wine that fascinatingly showcases the finesse of the vines and the characteristics of the terroir.
