Laab Namtok, Thai spice mix, LOBO
Laab/Larb Namtok is a dish from northeastern Thailand, commonly known as Isan. The word Namtok literally means `waterfall,` supposedly referring to the water (or liquid) that bubbles up inside the pork during cooking. It`s a similar recipe to Som Tam (Thai spicy papaya salad). You can substitute the pork with beef, fish, tofu, or mushrooms. Either way, you`ll end up with a wonderfully aromatic and delicious Thai salad. The minced pork is beautifully seasoned and served with coriander, fresh onions, fish sauce, and sticky rice.
