DE - ORGANIC - 039 The `Caviar` is an exceptional wine in every respect. Perfectly ripe grapes are destemmed by hand using the gentlest methods. Afterward, the grapes are crushed by foot, just like in the old days. The name `Caviar` comes from the renowned Master Sommelier Hendrik Thoma. He saw a photo of the destemmed grapes on Facebook and wrote: `Great! That looks like caviar!` In the glass, the 2019 `Caviar` Rheingau Pinot Noir presents itself in a rich, ruby-red color. The nose is initially dominated by vegetal notes, which mingle with nutty-sweet hints of maple and a light herbal note. On the palate, the 2019 Pinot Noir is very complex with a tart spiciness. These are complemented by red fruit aromas and a pleasant smoothness. The powerful finish is accompanied by a fine acidity that harmoniously rounds off the overall character of the `Caviar` Rheingau Pinot Noir.
