
Polenta -Rosso del Ticino, whole grain corn semolina
The red corn Rosso del Ticino is an old, local variety from Ticino. Given its excellent properties, it was reintroduced for the production of polenta semolina. The original seeds were found by Pro Specie Rara (Swiss Foundation for the Preservation of Genetic Diversity) in the 70`s-80`s from old people who grew this variety for their needs. Since 2004, Rosso del Ticino has been cultivated again for the marketing of polenta semolina. The name Rosso refers to the red color of the corn cobs. The polenta itself is yellow with red spots.
