Mild Macedonian peppers pickled in a salt and wine vinegar brine. The medium-sized peppers from Dimitra in Stavrochori are carefully sorted after harvesting and pickled in a delicately spiced brine. Peppers are a classic of Mediterranean cuisine. These mild to medium-hot peppers are primarily used to enhance salads and to make cheese dips, such as kopanisti. Dimitra was founded in 1970 by Ioannis Parparas and specializes in the production of pickled vegetables and olives.
