The grains, which resemble millet, are coated with a resin that is removed by washing before processing. Simmer quinoa for about 15 minutes; it is added to soups and used in cakes and croquettes. This goosefoot plant originates in Peru, where the plants, which can grow up to two meters tall, thrive in the Andean valleys at altitudes of 2,800 to 4,000 meters.
