AT - BIO - 402 Pet Nat Bambule M 2023, an organic sparkling wine made from Pinot Blanc and Muscat. Bottled with joie de vivre and individuality by Judith Beck. Pet Nat (short for `Petillant Naturel`) is a sparkling wine produced using an almost forgotten method of sparkling wine production. No additives are needed, neither sugar nor sulfur. All that`s required are grapes harvested at peak ripeness. Alcoholic fermentation occurs entirely spontaneously. The wines are bottled before the end of alcoholic fermentation. Sufficient sugar must be present in the fruit for fermentation to continue in the bottle and for carbon dioxide to be incorporated. Too much fermentation, however, will cause the bottle to shatter, which is why great skill and experience are essential. The result is unique, complex, and exciting sparkling wines.
