They are lightly seasoned with fleur de sel and preserved in the finest olive oil. The sardines are succulent and tender, and can be eaten whole. With each year of aging, these sardines improve, as the fusion of olive oil and sardines develops gradually, creating an incomparably harmonious pairing. The production of vintage sardines is limited.
