Siberian sturgeon (Apicenser baerii) offers darker roe and a spicy aroma. It pairs wonderfully with cold ingredients but is also a true delight on its own. The sturgeon are raised under controlled conditions in freshwater springs. The caviar is salted using a gentle process (Malossol) and produced according to a Persian recipe.
