Pine nuts (Pinaceae) are found as seeds between the scales of large pine cones. They have a sweet aroma and a tender bite. Roasted, they are sprinkled over salads, pasta, or pilaf, and they are an essential ingredient in the classic Genovese pesto. Best kept refrigerated.
