It`s short for `Petillant Naturel` and means nothing other than `naturally sparkling.` The term refers to a natural method of producing sparkling wine originating in France. Unlike the champagne process, the carbon dioxide responsible for the mousse comes directly from the first fermentation, and the still-fermenting wine is bottled with only sufficient residual sugar. Fermentation continues in the bottle, and the resulting carbon dioxide creates fine bubbles.
