Shirodashi with Crystal Soy Sauce and Katsubushi and Bonito, Fundodai Japan

This dashi concentrate is made with Crystal soy sauce. To intensify the flavor of Katsuobushi, we added bonito, which was not filtered out, making the flavor more robust and the concentrate more economical. It can be used like other Shiro dashi, but also as a dip (slightly diluted) or in dressings. Try the popular Japanese mayonnaise mixed with this dashi. The slightly smoky flavor of Katsuobushi not only complements Japanese dishes but also adds a finishing touch to Western fish soups, for example. It can also be used as a marinade for grilled vegetables or white asparagus.
