This paste is a seasoning made from crushed lemongrass. Lemongrass owes its name to the lemon-like aroma of its essential oils. It lends a delicate lemon note to Thai and Indonesian meat, fish, and vegetable dishes. The subtle aroma of the lemongrass stalks is fully preserved in the vegetable oil. Therefore, this lemongrass paste is far superior to dried powder and much more economical. It`s best not to cook the lemongrass paste with the dish, but rather to season it to your liking just before serving.
