MALIC, malic acid / texturizer, TOUFOOD

Naturally occurring acid found in many vegetables, but especially in sour-tasting fruits such as grapes, apples and green cherries. It has preservative and acidifying properties and is mainly used to acidify drinks and other products because it has a very enveloping acid profile in the mouth, concentrated in the corners of the mouth and the palate. It is usually used diluted in water or added directly to the preparation.
