A concentrated enzyme complex produced by the yeast Aspergillum niger. It breaks down pectin from fruits and other plant parts, clarifying juices and peels, blending and softening raw fruit and vegetable parts, and giving them a fresh taste. Cover, inject, or immerse the product in the pectinase solution. For optimal results, impregnation with 2-5 vacuum cycles is recommended. It can also be applied directly to the product as a powder.
