What makes this shoyu so special is that it comes from a single barrel, similar to a single barrel whisky! It`s a bit stronger and darker than Marunaka`s Jozo Shoyu in our portfolio. Made with regional ingredients, this shoyu has an exceptional bouquet that has garnered Marunaka international attention at all shoyu competitions. This aroma can only develop thanks to the unique microclimate of Shiga Province: sweltering summers and icy, snowy winters. It pairs perfectly with Wagyu beef and sashimi of fattier fish like tuna or salmon. Marunaka has been brewed using traditional methods for over 200 years. This means not only fermentation in wooden barrels but also the complete avoidance of modern industrial machinery. The tools and equipment associated with this shoyu brewer are otherwise only found in museums. The brewery itself is a protected historical monument. 100% handcrafted and unparalleled tradition. Not only does the legendary Kikunoi restaurant in Kyoto swear by this shoyu, but Michelin-starred chef Pierre Gagnaire is also a fan.
