A whole partridge, marinated in traditional Spanish escabeche sauce. Only partridges from regional poultry farmers are used for this gourmet preserve. They are gently cooked whole, seasoned and marinated in extra virgin olive oil. The result is a tender and juicy meat structure - with a delicately spicy taste. Ideal as a starter or as a salad.
