To preserve the delicate, flaky crystals, Flos Salis® is carefully filled into exclusively crafted containers. Tellicherry pepper is made from fully ripened, red peppercorns, which are fermented and dried with all the pulp. This process turns the pepper black, but not jet black; rather, it has a pleasantly deep brown hue. This method also intensifies the aroma: the fully ripened peppercorns have developed a distinctly nutty flavor, as well as a robust spiciness. This pepper is primarily used with dark meats such as game and beef, but also in chocolate desserts.
