Sumac, coarsely ground, Altes Gewurzamt
Sumac, also known as sumac or Sicilian sugar, is obtained from the berries of the sumac tree, which is related to the staghorn sumac. Its flavor is slightly sour, fruity, and tart. Sumac is a popular table spice in Turkey and Iran. The ground berries pair well with eggplant, fish, seafood, chicken, yogurt, chickpeas, lamb, lentils, rice, pine nuts, and walnuts. Mixed with freshly sliced onions, sumac is also enjoyed as an appetizer. The Turkish fast-food specialty doner kebab is frequently seasoned with sumac.
