Couscous, roughly
Couscous refers to both the grain and a national dish of several North African countries. A mixture of semolina and flour is moistened and then pressed or rolled. The traditional method of preparing couscous is steaming. It can be served as a side dish or mixed into salads. Couscous can also be used in casseroles or desserts.
