Paccasassi - Samphire in Extra Virgin Olive Oil, Rinci
Paccasassi, or sea fennel, is an aromatic herb that grows wild along the Mediterranean and the coasts of Northern Europe. It is also known as sea thistle or rock samphire. Its use dates back to antiquity and it was even mentioned in Shakespeare`s *King Lear*. It is popular in Mediterranean cuisine. The cultivated herb is prepared according to an ancient recipe, marinating it for a long time in wine vinegar and then infusing it in extra virgin olive oil. Sea fennel in oil is extremely versatile and is excellent for imaginative appetizers or as a side dish or topping for high-quality meat, salami, and fish dishes. It is perfect on its own on bread or excellent with mortadella, along with anchovies, smoked salmon, and oysters. If the sea fennel happens to be gone, the remaining extra virgin olive oil can be used as a flavorful dressing for salads and appetizers.
