Miso seasoning paste - Aji Aka Miso, dark
Miso is a fermented soybean paste used in soups, sauces, and as a seasoning. It consists of soybeans, rice, salt, rice yeast, and spices. There are different types of miso. The darker the miso paste (akamiso), the higher the salt content and the more intense the aroma and flavor. Lighter miso (shiromiso), on the other hand, has a sweeter taste. It`s therefore not surprising that the flavor of a miso soup depends heavily on the type of paste used.
