The pocha is a type of white bean that is harvested before it is ripe, especially in Navarra, La Rioja and Alava, which is why it is known as a fresh bean. The season for this type of white bean is short, with the harvest starting in mid-July and ending in the second half of September. This legume has a fine and smooth texture. In this jar is a ready-made bean stew with vegetables and spices that only needs to be heated and can be consumed all year round and not just during the short harvest season. The bean stew is traditionally prepared in two steps, first the pocha are covered with water in a pan for about 45 minutes and gently heated until the beans become soft. At the same time, vegetables such as onions, peppers, tomatoes and spices are heated in the pan with a dash of olive oil. At the end, everything is put together and left to simmer a little.
