Hon Mirin Jun, 14% vol., Kokonoe Mikawa, Japan
This Hon Mirin is brewed only in small batches, using exclusively raw ingredients from the Mikakawa region (Aichichi Prefecture). As is typical for a true Hon Mirin, this one consists of just three ingredients: mochigome (sticky rice), koji rice, and shochu. Its aroma enhances the flavor of dashi and other condiments. The Kokonoe Brewery has specialized in mirin for approximately 250 years and brews its specialties in the city of Hekinan, a center for food manufacturing that produces shoyu, miso, vinegar, and other products.
