Serves as a binding agent for baking, but also for making pasta. It can be used alone or mixed with wheat flour or chickpea flour. Also used for Chinese and Southeast Asian dim sum. Can also be used very well for diet food and baby food. Mixed with chickpea flour it makes a great tempura batter, for example for whole grain allergy sufferers. Mix rice flour and chickpea flour with, for example, apple juice, spices and saffron or turmeric for the color.
