Lecithins are fat-like substances that are found in many plant and animal cells as an accompanying substance. They contain essential nutrients that the human body cannot produce itself. Lecithins, such as soy lecithin obtained from soybeans, are used as emulsifiers and are soluble in water and in preparations containing fat. They are used in the production of bread and baked goods, desserts, chocolate, ice cream and in mayonnaise and salad dressings.
