In its 140-year history, there are only a handful of years and barrels that the Suehiro family is truly satisfied with. This demonstrates not only the brewery`s high standards but also the quality of this product. The ingredients and temperatures must be just right to brew this limited-edition shoyu. The mash was started in the winter of 2017 and has now experienced its fourth fermentation. Every bottle of this premium product has a serial number, and we are delighted that Suehiro has provided us with a very small quantity. Perfect for seasoning delicate dishes, but best enjoyed raw. Naturally brewed shoyu like this one has a deep flavor that doesn`t linger! Enjoy it with sashimi or an excellent steak! Suehiro was founded in 1879 in Hyogo Prefecture and is one of the best breweries in the Kansai region. Famous for its light soy sauce, Suehiro also brews dark shoyu and other specialties that are second to none. Even if fermentation does not take place in wooden barrels, the over 100-year-old bacteria in the wooden beams of the factory give the shoyu unique aromas.
