The peel and the squeezed juice of these lemons in brine are used. The taste is unique and when used correctly, lemons are a wonderful spice that is preferred for North African dishes such as Moroccan tajines. The shell, which has largely lost its bitterness when it has been preserved, can be cut into small pieces to flavor soups, sauces or vegetables.
