Kuzu is short for kuzu starch, a carbohydrate extracted from the root of the Asian plant of the same name. It is also known as kudzu. Particularly useful for broths, sauces, creams, and purees, it offers a wide range of textures. Its ease of use allows for precise calculation of the desired viscosity in the final preparation. It is also suitable for batters and crispy textures. Mix hot or cold, stirring vigorously, and heat only until just before boiling.
