The base is gooseberry with a clear and fine scent. Rounded off with the pleasant sweetness and fullness of the cider pears and the slightly lively acid structure of the old apple varieties. This cuvee was subtly refined with Douglas fir tips, bronze fennel, borage, yarrow and spices. Nose: Fresh apple with intense gooseberries, light vegetal notes of Douglas fir and a subtle nose of meadow herbs. Taste: Fresh and fruity with apple and notes of gooseberries. Exciting acidity and pleasantly restrained sweetness in the long, tart finish.
