DE-ÖKO-001 Buckwheat is mainly prepared as a soup or groats in Russia and Poland. It resembles the beechnuts, but is much smaller. The rich content of protein and starch makes buckwheat, which is not actually a grain but a knotweed plant, a valuable grain. In conjunction with wheat or rye, it is used to prepare bread, pastries, porridge and groats.
