Long-life sausage Fuet Negro de Mallorca, Xesc Reina
From the heart of Mallorca: premium sausage from Xesc Reina! Xesc Reina is one of Spain`s most renowned sausage makers. In collaboration with the Gebruder Company, he produces the finest sobrasadas and fuets from the Porc Negre (a Mallorcan breed of pig). These pigs live and are raised free-range on two idyllic farms in the center of the island (near Sant Joan and Maria de la Salut), feeding on carob, figs, olives, and only the grain grown on the property. The Porc Negre are raised there in separate age groups, amidst forest, fruit trees, and mud, living a wild and stress-free life. They are slaughtered at approximately 12-14 months of age. From their muscle meat, Xesc Reina makes fuet sausage. Only specific lean cuts of the pig are used. 30 kilos of meat yield approximately 15 kilos of sausage after drying, which is about 100 fuets. It matures in approximately 1.5 - 2 months.
