For this vinegar, the sake pomace was aged for three years and then matured in wooden barrels using traditional methods. This base vinegar was balanced with other vinegars to achieve a particularly deep flavor. It`s perfect for Japanese vinegar dishes (sunomono) and can also be mixed with shoyu, sugar, and sake as a marinade for fried dishes and tempura (tofu, vegetables), or as a base for sushi vinegar. High umami! The Kisaichi Vinegar Factory, founded in 1922, specializes in sushi vinegar. Their various vinegar products have been popular with Michelin-starred restaurants in Tokyo and Osaka for decades. All vinegars are traditionally brewed from basic Japanese ingredients and contain no additives. They have a low acidity that won`t over-acidify sushi rice. The natural amino acids enhance the natural sweetness of the sushi rice.
