MAXIMUM INTENSITY - A blend of Criollo and Trinitario cocoa beans from South America. A very rich chocolate flavor. Exceptionally bitter and with a very long finish. This couverture is universally applicable. It consists of 70% cocoa, 29% sugar, and has a total fat content of 42%. Callets resemble small chocolate drops and are ideal when only a small amount of chocolate needs to be melted, as they are easy to portion.
