Ideariso cultivates this visually and tastefully unusual rice variety in the provinces of Vercelli, Novarra and Pavia. Riso Rosso is a purely Italian variety. The taste is spicy and complex, with a slight liquorice aroma. The grainy rice is very suitable for salads with seafood and mushrooms, as a vegetable filling, for oriental preparations with raisins and pine nuts, Creole recipes such as jambalaya and as a soup for minestrone.
