Oyster sauce is particularly popular in Cantonese (Southern Chinese) cuisine. They are often used with beef and quick roast dishes. The base of the sauce is oyster extract and soy sauce, which are lightly flavored with various spices such as salt, onion and garlic. Although the oyster extract is the main ingredient in the sauce, it hardly tastes fishy. The sweet and salty oyster sauce is mainly used to season sauces and to marinate meat or poultry.
