Oyster sauce is especially popular in Cantonese (southern Chinese) cuisine. It is often used with beef and quick stir-fries. The base of the sauce is oyster extract and soy sauce, lightly flavored with various spices such as salt, onions, and garlic. Although the oyster extract is the main ingredient, it hardly tastes fishy. The sweet and salty oyster sauce is mainly used to season sauces and marinate meat or poultry.
