After harvesting, the cockles are stored in containers of seawater to naturally remove the sand. After steaming, the cockles are removed from their shells and rinsed again in warm, salted water. Depending on their size, they are then preserved in their own stock. They taste delicious on their own, with pasta alle vongole, or with all rice and fish dishes. Los Peperetes, a Galician manufactory, produces top-quality preserved seafood. Owners Jesus Lorenzo and his wife Dona Paz originally began preserving these little delicacies at their popular restaurant, Los Peperetes.
