A brine solution is produced from crystal salt from the Punjab mountains and circulated in evaporation basins. The resulting fine layer of salt is skimmed off by hand and dried in the sun. These delicate rock salt flakes are a perfect finishing salt. Suitable for anything that can handle salt: from raw shellfish to meat and vegetables, and even fine pastries.
