The capers are from Pantelleria and preserved in sea salt. Their size is particularly small and the buds are completely closed, which is why they are well suited for light sauces, as an accompaniment to fish dishes, for antipasti and fillings. The salt best preserves the clear, elegant taste of the capers. First you have to remove the salt and then water the capers for a few hours. Then you have a small pearl in front of you, which is finely dosed and used in a targeted manner, a delicacy.
