Especially small capers, original from Pantelleria, are preserved in sea salt. After carefully desalting them for a few hours, they are particularly suitable for vitello tonnato and light ragouts, but also in tuna salad and other Mediterranean salads. They have compressed the taste of capers and are particularly suitable for cold preparations. They have a pleasantly crunchy consistency. These are the first buds to be picked.
