Late September to December 31st. Occurrence: approx. 25 tons / year in the Piedmont / Alba area. The sorting is from 25g-100g. (Sometimes larger) Brownish white truffle (tartufo bianco) with a relatively smooth surface and an intense smell. The color of the flesh varies depending on the tree (nut to cream), the shape depending on the soil conditions. White truffles are generally only planed raw over the finished dishes. You calculate 5g (small starter) to 15g (generous over the main course) per portion. This truffle is only collected in Alba and is individually packed and sealed, the place of discovery is certified and confirmed by the city of Alba. White truffle, best quality with certificate.
