This pepper from Cambodia is an absolute rarity. The real red peppercorns (piper nigrum) are fully ripe fruits that taste fine, almost sweet and fruity. The inner core produces a strong, lasting sharpness. The Kampot pepper spices pork, chicken and fish and is also suitable for fruits such as ripe mangoes and strawberries. Since the grains are too soft (and too bad) for the mill, they should be crushed in a mortar just before use.
