These olives are preserved in brine and not seasoned. They are suitable for salads or as a side dish, because they do not distract from the essential with their mild taste. They are about 4 cm tall. Green olives are still picked immature. Before being placed in brine, they are treated with lye. This process reduces the bitterness of the fruit which has not yet ripened and improves the consistency of the pulp. The olives develop a characteristic aroma and are a popular decoration for cold dishes; especially with spicy sauces. They are also a popular addition to specialties from the Mediterranean countries
